Smell of loaves

I can’t help but notice we consume a lot of bread. I used to complain that my kids don’t eat.. Long gone are those day as these day my kids can eat! When they are having a good appetite, they sure can eat a LOT! 

I keep track and notice we finish a loaf easily in a day or half! So I decided that even though I’m busy enough on day to day basis, I can’t find excuse to make sure my family eat healthily! So Ioaned my sister’s bread machine to go for a trial run. 

Tesco BM-10, cost her about slightly below RM200.   
 This simple machine can do quite a lot of things! From baking bread loaf, sweet bun, pizza dough, jam, kaya, baking cakes etc. 

I tried the recipe given and to my horrors, the bread turn out to be almost STONe Hard! No prize doe guessing where the first loaf went. I figure maybe coz my flour sits there too long, expired d! So I went buy floursssssssss and TRY AGAIN! 
~~~HORROR~~~_<_<_ still! Then I cleaned the BM and thought I’ll return it soon. But just when I’m about to give up, a friend of mine posted a very successs loaf(you know who u r Soo Kee) and I saw the recipe, it sounded SIMPLE! So I decided to give it another Go!

First success loaf!    
   Suddenly, I can’t stop baking bread everyday!

Butter chives pork nugget

Today is “please my J day”! so we have crispy fried stuffs.

I make home made pork nuggets. I marinated the pork, coat with corn flour, dip in egg, then coat with home made butter chives mix. Fried! Served!

The butter chives mix is very easy, u can use it to coat other thing like fish or chicken fillet.

I mix 6crackers with butter, handful of Chinese chives, pink of salt and pepper, mix in magic bullet and its ready!!!

J tried this after I cook it, immediately he said:”I’m hungry mummy!” X99times.

Oat and Walnut Chocolate Chip Cookies

Oat and Walnut Chocolate Chip Cookies
Ingredients
· 125gm all purpose flour
· 1 teaspoon baking powder
· 1/2 teaspoon baking soda
· 225gm salted butter, softened
• 300gm brown sugar
· 2 eggs
· 1 teaspoon pure vanilla extract
· 215gm old fashioned rolled oats
· 250gm cups semi-sweet chocolate chips
· 120gm cup walnuts, chopped
Directions
Pre-heat oven to 350 degrees F.
In a medium bowl, mix together flour, baking powder, baking soda. Set aside.
In the bowl of a mixer, add softened butter. Beat for 30 seconds until smooth. Add in brown sugar. Cream till smooth. Add in eggs, vanilla and mix until fully incorporated. Gradually add in flour mixture. Mix thouroughly. Add in rolled oats and mix until evenly distributed throughout dough. Fold in chocolate chips and walnuts with a rubber spatula or spoon.
Drop cookies by slightly heaping tablespoons onto cookie sheets.
Bake for 10 -14 minutes depending on the size of the cookies. Cookies should appear golden brown on the edges and just set in the middle.

For 30hours, we are enjoying being parent to one. Don’t ask, we just are…
The “UNO” is not used to it…. He seeks his “dos” and “tres”.

We have the luxury of eating at one of our very economical and yummy coffee shop after morning mass.

Cooking – ham & egg fried rice

On Monday, I made spaghetti soup for M&J. I realize they eat better when I serve them pasta or noodles as compared to rice. Then I told them we will be having porridge on Tuesday and fried rice on Wednesday.

Manfred was delighted! He said:”yumyum! Wednesday is yum yum day!”

Lol he ate fried rice the previous week and he loved it! Looks like my cooking is indeed improving.
