Simple food that feeds my family

i bought some skewers from daiso last year, and never use before, I came across a skewer chicken fillet one day while browsing FB. So I decided to make skewers chicken with capsicum and roast potatoes! This is da-bomb! Jude the picky eater also polishes his plate! Says again food presentation is some important to a kid’s appetite
  He finished everything. Nate has more than him!
ONeighbor gave me some banana which my kids doesn’t want to eat it by its own (most day I don’t have luxury of baking anything with banana as it finishes very soon)

So since they don’t like that particular banana I decided to bake banana peach muffin, which was very nice! The fragrant of peach and sweetness of banana make this the perfect afternoon tea snacks

 This was one of those Monday blues loaf. It was using 65c tang zhong method. I’ve tried 5c and 65c starter dough method and I have come to conclusion that 65c tang zhong method makes soft and fluffy bread that the softness lasted more than3 days

Fcream cheese bun. This is the most satisfying batch of cream cheese bun! I really wish I have more time to bake more bun like this.

Smell of loaves

I can’t help but notice we consume a lot of bread. I used to complain that my kids don’t eat.. Long gone are those day as these day my kids can eat! When they are having a good appetite, they sure can eat a LOT!

I keep track and notice we finish a loaf easily in a day or half! So I decided that even though I’m busy enough on day to day basis, I can’t find excuse to make sure my family eat healthily! So Ioaned my sister’s bread machine to go for a trial run.

Tesco BM-10, cost her about slightly below RM200.
 This simple machine can do quite a lot of things! From baking bread loaf, sweet bun, pizza dough, jam, kaya, baking cakes etc.

I tried the recipe given and to my horrors, the bread turn out to be almost STONe Hard! No prize doe guessing where the first loaf went. I figure maybe coz my flour sits there too long, expired d! So I went buy floursssssssss and TRY AGAIN!
~~~HORROR~~~_<_<_ still! Then I cleaned the BM and thought I’ll return it soon. But just when I’m about to give up, a friend of mine posted a very successs loaf(you know who u r Soo Kee) and I saw the recipe, it sounded SIMPLE! So I decided to give it another Go!
First success loaf!
   Suddenly, I can’t stop baking bread everyday!
      Wholemeal raisin loaf  Chocolate chip cranberry loaf  Basic milk loaf   Pain de Mie to go with my favorite butter
Cooking – pork croquettes
20131014-213538.jpg
Browsing the recipe that’s comes with Philip air fryer, I ransack my fridge, and decided to make my own version of pork croquettes. It’s actually minced pork add in whatever leftover greens and shaped into supposingly cylinder… But I decided to name it pork croquettes so that it sounds more delicious. (Don’t slap me !)
I use
1 pork belly(minced)
Handful of coriander
Handful of spring onion
4 water chestnut
Mix all the ingredient until well combine and season with amino acid, pepper, sugar, and vegetable bouillon.
I shaped it into desire shape, dip into egg white, and then coat it with bread crumbs. I have also added 1table spoon of olive oil into the bread crumb before coating it.
Place the croquettes into air fryer basket, bake for 16-20min at 200degree.
Made about 20-24 bite sizes croquettes. We finish half and I deep freeze another half for next week.
Air fryer cookathon!
As u know, I got new toys in my kitchen. Bear with me if we seems to be eating too much fried stuffs.. Gotto experiments ma
20131010-155036.jpgair fried Ang Ku! I heard my fren said they love pan fried Ang ku so I figure I can air fried it! Crunchy skin and the filling still juicy. 160degree for about 10min only and breakfast is served!
20131010-155148.jpgair fried chicken! I just coat with Kentucky flour for fried chicken and pop into the air fryer. No oil added… 180degree for about 20-30min.. No skin also crunchy and M ate 2 drumstick while J had 1… I had left over bone..
20131010-155315.jpgpan fried teriyaki salmon! My favorite! I use some olive oil (1/2 teaspoon) rub on fish, 1.5tablespoon oil came out! ( I suppose the oil from te fish itself comes off.
I think it’s the matter of temperature control that makes the food yummy…. I feel the food I cook using air fryer is getting tastier as I know how to control and use it better….
More to come!
